Single Source or Purist Plantation chocolate:

This is chocolate grown at a single Cocoa Plantation, or a single region of the same type of bean, but more often from a single estate or plantation. This gives the opportunity to experience the unique characteristics of each type of cocoa bean as well as the unique properties that apply to a single estate, based on the type of bean, the weather and soil conditions.

Single Source is best tasted on its own or with red wines and with the cleansing of the pallet between each tasting with plain bread such as small pieces of baguette.

What are the different cocoa beans and their characteristics?

The types can be reduced to three classifications:

  • Criollo, The prince of cacaos, is a soft thin-skinned pod, with a light color and a unique, pleasant aroma grown in South American, Central American and the Caribbean.
  • Forastero, a more plentiful type, is easier to cultivate and has a thick-walled pod and a pungent odor grown on the continent of Africa.
  • Trinitario, which is believed to be a natural cross from strains of the other two types, has a great variety of characteristics but generally possesses good, aromatic flavor; and these trees are particularly suitable for cultivation.

Trinidad: 65% cocoa "Trinitario bean" fruity & red winy aromatic notes. Grown on the Oropucce Plantation near the river of the same name.

Peru 65% cocoa "Criollo bean" Rich, Exotic fruits aromas. Grown in the depths of the Amazon jungle on the Alto del Sol Plantation which produces some of the world's finest beans.

San Tome: 70% cocoa :"African Forastero bean" from the San Tome islands off the west coast of Africa. Full-bodied, robust long in the palate.

Venezuela 72% cocoa."Criollo Bean" Tangy and fruity ".

Beans from 100 year old cocoa trees. The criollo bean is treasured for their unrivalled quality and highly sought after by the world's most discerning connoisseurs.
